Sarumathi or Saru Jayaraman is a lawyer, author, and activist. She is the President of One Fair Wage (OFW), a left-of-center non-profit non-governmental organization that represents restaurant workers and service employers.¹ OFW advocates for the workers it represents to receive a full minimum wage.²³ Jayaraman is also the Director of the Food Labor Research Center at the University of California, Berkeley. Jayaraman, with the help of restaurant workers displaced by the 9/11 terrorist attacks, founded the Restaurant Opportunities Center (ROC), a non-profit organization and workers center. ROC advocates for increased wages and improved working conditions for restaurant workers.⁴
